Dorade en Papillotte

Ingrediënten 4 personen

  • 1 flinke bos basilicum
  • 2 tenen knoflook
  • 8 el olijfolie
  • zout
  • peper
  • 1 grote dorade a 800 g, of 2 kleintjes, schoongemaakt, met kop en staart
  • sap en rasp van 1 citroen
  • 2 takjes marjolein, blaadjes gestroopt
  • 3 blaadjes laurier
  • 4 trostomaten

Bereiding

Pureer de basilicum met de koflook en 4 el olijfolie, het mag een natte puree zijn.

Breng de basilicumsaus op smaak met zout en peper. Neem een stuk bakpapier van minimaal 70 cm lengte (de vis moet er royaal in verpakt kunnen worden) en leg het midden op een bakplaat.

Wrijf de binnenkant van de vis in met zout, peper en wat citroensap en bestrijk deze dan met de helft van de basilicumsaus en marjolein.

Leg de laurierblaadjes in de buikholte. Neem de uiteinden van het papier naar boven samen, vouw ze samen een paar slagen op en neem dan de zijkanten net zo samen en vouw die ook op. Bak de vis in 20-25 min. gaar.

Ontvel intussen de tomaten, verwijder het vocht en zaadjes en snijd het vruchtvlees fijn. Verwwarm 4 el olijfolie en bak de tomatenpulp in ca. 10 min. zachtjes tot een saus. Roer de rest van de basilicumsaus door de tomatensaus en breng dit op smaak met zout en peper.

Neem de vis uit de oven, vouw het papier open en laat de vis 1 min. rusten.
Fileer de vis als volgt: trek het vel van de boven-zijkant los en schep voorzichtig het visvlees van de graat.

Neem de graat uit de vis en neem nu het onderste visvlees van het vel. Verdeel het visvlees over 4 borden en serveer met de tomatensaus.
