- 200 g risottorijst
- sap van 1 goed schoongeboende citroen
- 60 gr boter
- 1 sjalot, gesnipperd
- 75 ml droge witte wijn
- 500 ml hete groentebouillon
- 100 gr zeekraal
- 100 g mascarpone
- rasp van 1 goed schoongeboende citroen

Bereiding
1. Verhit in een grote koekenpan met dikke bodem 40 g boter en fruit daarin de sjalot tot deze glazig is. Schep de risottorijst door de ui en bak zachtjes mee tot alle korrels glanzen en wat transparant worden. Dit duurt een minuutje.
2. Blus af met de wijn en roer door totdat bijna alles verdampt is. Voeg dan een soeplepel hete bouillon toe en blijf roeren met een houten spatel tot alle bouillon is opgenomen door de rijst. Herhaal dit tot de korrels ‘al dente’ zijn, dit duurt zo´n 20 minuten.

4. Verhit vlak voor het einde de olijfolie in een koekenpan en roerbak de zeekraal twee minuten.
